This modern breed boasts creamy-white flesh that remains firm despite the large size of the roots. Ideal for making homemade coleslaw â simply grate and enjoy the crunchy texture and subtle celery-like taste. After harvesting its roots from October to November, celeriac âMarsâ stores well but can be left in the ground over winter if covered with a 15cm (6") layer of straw for protection.
